I discovered Fossa Chocolate thanks to the team at Caputo’s and ordered a bar of the Duck Shit Dancong as gift, partly based on the name, partly based on the description.
Fossa Chocolate is handcrafted in Singapore and everything is made from scratch: roasting, cracking, winnowing the cacao beans and then refining them into chocolate.
But it’s their flavors, as well as the quality of the chocolate, that is inspirational. The Duck Shit Dancong is a limited release bar made in collaboration with a tea curator. The flavor is long, delicate, floral, and lots of tea notes.
Two other unique flavors I’ve tried:
the Sake Kasu Dark, which is made with sake kasu sourced from two craft breweries, has a almost chewy crunch to it, but bursts with sake flavor.
the PPP Cascara Tea Chocolate — cascara means ‘peel’ in Spanish and is the skin of the coffee cherry. As a way of recycling the leftover coffee pulp, cascara creates the base for a unique and refreshing tea. This bar has lots of floral and tea flavors.
I’m looking forward to trying the Shrimp & Bonito Flake as well as the White Sesame & Seaweed chocolates.
